With just 10 minutes of prep and 15 minutes of cook time, this creamy, zesty side dish blends charred corn, garlic, smoked paprika, and a generous swirl of rich Mexican cheese sauce. Finished with lime, coriander, and optional feta for a tangy punch, it’s a perfect addition to any summer spread. Whether you’re hosting or meal prepping, this salad brings bold flavour and cheesy goodness to every bite, all in under 30 minutes.

Serves: 4–6
Ingredients
4 cups corn kernels (fresh, canned, or frozen and thawed)
1 tbsp olive oil
2 cloves garlic, minced
1 tsp smoked paprika
1 tbsp lime juice (plus wedges for serving)
Salt and pepper, to taste
250g Gourmet Dairy Co. Mexican Cheese Sauce
¼ cup mayonnaise or sour cream
¼ cup fresh coriander, chopped
½ tsp chilli flakes or Tajín seasoning (optional, for heat)
¼ cup spring onions, sliced
¼ cup crumbled feta or cotija cheese (optional for extra tang)
Method:
Char the Corn: Heat olive oil in a large skillet over medium-high heat. Add corn and cook for 6–8 minutes, stirring occasionally, until lightly charred. Add garlic and cook for 1 minute.
Season and Combine: Stir in smoked paprika, lime juice, salt, and pepper. Turn heat to low and stir through the Mexican Cheese Sauce until well combined and heated through.
Finish & Garnish: Remove from heat. Drizzle with mayonnaise or sour cream, then sprinkle over coriander, spring onions, chilli flakes (or Tajín), and crumbled cheese if using.
Serve Hot: Serve immediately with lime wedges on the side.
